Over the years I have learned that Valentine’s Day seems to only be a big deal when you have no one to share it with. Bryan and I have come to celebrate the day of love with a small note or a few flowers, realizing that it is the rest of the year that really makes a relationship special. However, I think that something small and thoughtful is always appropriate. So, whether you are looking for something easy to make for your special valentine or on a random night “just because”, I have 2 no bake recipes below that are sure to be a hit…
First, Spiced Yogurt Parfait with Dried Fruit Compote…
For this quick and fairly “healthy” dessert I took 2 small containers of plain, nonfat Greek yogurt and stirred in 2 tablespoons of honey, 1/4 of a teaspoon each of ground cardamom, cinnamon and vanilla extract. I then dove into my cupboard for dried fruit, I came up with raisins, figs and cranberries!!! I combined them and tossed a cup of them in a small saucepan with 1/4 cup water and 1/4 cup of port. Simmered for about 5 minutes and let cool. Layer them in a glass and serve. Just sweet enough to be special…
Next I made Ice Cream Parfait with Raspberry Jam and Shortbread Cookies…
I love grocery shopping, and I love grocery shopping even more when I have a few hours to spend wondering around Whole Foods Market. Although, I find much of what they sell to be overpriced I can’t help myself!! When I don’t have time to make something from scratch I think that WF has the best variety of quality items that just help make your “easy” recipe impressive. I used Hagan Daaz Vanilla Ice Cream (the kind with only 5 ingredients!!!), raspberry jam with seeds and Effie’s Oatcakes. By microwaving the jam for about 40 seconds I was able to easily spoon it over the ice cream like it was more like a sauce. I crushed the cookies in a plastic sandwich bag and that was it!!! Feel free to switch up the flavors.
I admit that since I spend my day whipping up sweet treats I am not always ready to jump into another project when I get home. The two ideas that I present here not only save a little time, but they allow you to create something a little different that show others you love them enough to “cook”… well kind of!!!
