This is a modification of an old post. Part of my holiday baking agenda this year was to prepare a box of cookies for my friends at Hungry Mother. I miss them and wanted to stop in with some holiday goodies. What better ingredient to present HM with then BACON!!! Along with collard greens, grits and catfish, PORK is a top ingredient in that kitchen. I used bacon in a few of my desserts and they were always greeted with wide eyes and smiles. I used my chocolate chip cookie recipe and added 1/2 cup crispy, smoky bacon chopped in itty bits. The chocolate plays with the salt and smoke of the bacon beautifully and the flavors bring the richness of these cookies to a whole new level, a natural complement to your favorite bourbon based cocktail!!
